Easy Apricot Slice

This is such an easy slice and really delicious

Ingredients​

  • 200 g dried apricots diced
  • 2 cups self-raising flour
  • 1/2 cup sugar
  • 3/4 cup shredded coconut
  • 185g butter, melted

Method​

  1. Soak apricots in hot water for 2 hours then drain.
  2. Add sifted flour, sugar and coconut. Pour over melted butter.
  3. Mix well and press into a greased 30 cm x 20 cm slice tin. Bake at 180C for 25 minutes. Remove from oven and leave in tray to cool.
  4. Once cool slices can be cut up as is or you can make a lemon icing to drizzle on top Or even melted chocolate drizzled over

Hi Suzanne,
I baked your slice. A bit crumbly but very yummy. I soaked dried blueberries and a few cranberries. Topped with a thin coating of dark chocolate. My snapshot slices aren't as neat as the above photo. lol

I made this with my granddaughter's today and we had it for desert with custard .
They loved it and my daughter was amazed how easy and how delicious it was

Last piece left

We added a lemon icing dripped on top

Lemon icing

Mix together 2/3 cups icing sugar with 1 tablespoon lemon juice and 2 teaspoon boiling water . Then drip on top
