Coconut and Apricot Crumble

This is a different take on the traditional apple crumble that we all know.
You can use fresh or tinned apricots, and peaches work just as
well. Serve with custard, cream or ice cream

Serves: 6
Prep Time: 10 minutes
Cooking Time 35 to 40 minutes

Ingredients:

Filling
1 x 825g tin apricots, drained (or 10 fresh apricots, sliced, stones removed)
½ cup desiccated coconut
½ cup brown sugar
Topping
1 cup self raising flour
½ cup sugar
100g butter, cubed

Method:

• Preheat oven to 180°C ir 160 °C fan forced , grease a 20 cm ovenproof dish.
• Place the apricots in the dish, then sprinkle over the coconut and brown sugar.
• For the topping, place the flour and sugar in a medium-size bowl and mix.
• Add the butter, and rub together until the mixture resembles breadcrumbs.
• Sprinkle the mixture over the apricots
• Bake for 35–40 minutes until bubbling and golden.

Ohhh yum 😋 I know what I’m going to bake later but do I use my tinned plums or apricots.hmmmm! I’ll toss a coin.🌞

The apricots won out, the tinned plums have still got the pips in them agggh.! And I’m not spending the day trying to get them out.🌞
 
My daughter's birthday is coming up and this recipe is perfect for dessert - problem solved as I was not sure what to make - thanks again Suzanne - this recipe is easy and in my budget 🥰

I opened my tin of spc apricots but they looked dark and unappetising not like what an apricot should be🤢 the tin said 💯 per cent Aussie product. Also the tin wasn’t lined it was just the metal and smelt metallic.😳so I chucked them to the birds, anyone else buy spc fruit and is this safe.😳

I always buy Aldi's Sweet Valley apricot halves in juice - I have never had an issue - try it 👍

I always try to buy my fruit in a plastic container, so I can see what to looks like….might cost a bit more, but I do not buy what does not look appealing!!

I'll make it this week. I like Goulburn Valley apricots in juice. It will be yum!

😲 Did you notice there is no expiry date. I only ever see it on the plastic container ones not the cans

I can’t get to an aldi store but I usually buy Goulburn valley see through containers but thought I’d try spc.🌞

You can use other fruits, apple goes well , either cooked apple or a can of pie apples,
I have used frozen berries as well
I have used a can of crushed pineapple
