Succulent Sweet & Sour Fish Fillets

For those of us who crave that meaty texture but are a bit tired of beef, lamb, and chicken, fish is a perfect option. Fish fillets are a great source of lean protein and are relatively low in calories. They are also a good source of omega-3 fatty acids, which have been shown to reduce the risk of heart disease.

This recipe for sweet and sour fish fillets is a great way to enjoy fish without having to rely on a deep fryer. The fillets are coated in a light batter and then pan-fried until crisp. They are then simmered in a sweet and sour sauce made with pineapple, vinegar, and sugar.


Ingredients:

-500 grams white fish fillets
-1 cup flour
-1 teaspoon baking powder
-1/2 teaspoon salt
-1 egg, beaten
-1/4 cup milk
-Vegetable oil, for frying

For Sweet and Sour Sauce:

-1/2 cup pineapple juice
-1/4 cup white vinegar
-1/4 cup sugar
-1/2 teaspoon cornstarch
-1/2 teaspoon salt
-1 piece onion
-1/2 red capsicum, cut into strips
-1/2 green capsicum, cut into strips

Instructions:

1. Preheat a large skillet over medium-high heat and add enough vegetable oil to coat the bottom.

2. In a bowl, whisk together the flour, baking powder, and salt. In another bowl, whisk together the egg and milk.

3. Dip the fish fillets into the flour mixture, then the egg mixture, and then back into the flour mixture.

4. Place the fillets in the hot oil and cook for 3-4 minutes per side, or until golden brown and cooked through.

5. Remove the fish from the skillet and set aside on a plate.

For the sauce:

6. In a bowl, combine pineapple juice, vinegar, sugar, cornstarch, and salt. Stir until smooth.

7. In a small saucepan, heat about 1 tablespoon oil. Saute the onion and the capsicums for 2 minutes. Set aside.

8. In the pan, add the sauce mixture and bring to a boil. Whisk it regularly for about 2 to 3 minutes or until thickened.

9. Then add the capsicums and onions to the sauce and cook for 2-3 minutes, or until tender.​

10. Toss the fried fish fillets into sweet and sour sauce until each fish fillet is well coated. Serve hot and enjoy!
