Hearty Ham & Pea Soup


Summer is now sadly behind us, but on the bright side, there's nothing quite like the feeling of sipping on a delicious and hearty soup to keep you warm on a chilly day. This ham and pea soup is the perfect comfort food!

Ingredients:

500 grams diced ham
2 cups green peas
1 onion, diced
2 carrots, diced
1 potato, diced
1 litre chicken or vegetable stock
2 tablespoons olive oil
1 tablespoon butter
1 tablespoon flour
Salt and pepper, to taste

Instructions:

1. In a large pot or Dutch oven, heat the olive oil and butter over medium heat.

2. Add the onion and carrots, and sauté for 5 minutes until softened.

3. Add the ham and sauté for 5 minutes more.

4. Add the flour and stir to combine.

5. Add the stock and bring to a simmer.

6. Add the potatoes and peas and simmer for 10 minutes until tender.

7. Blend until smooth. Season with salt and pepper to taste and serve hot.

This looks so yummy. However I would keep some of the ham back to put in after the rest was blended so that you still have some pieces in it. Please put this recipe in the next cookbook as I'm sure to lose it before I need it.:):love:
