• 800g desiree potatoes, peeled

• 2 garlic cloves, crushed

• 2 tbsp fresh thyme leaves

• 300ml pure cream

• Step 1

Preheat oven to 200°C/180°C fan-forced. Brush a 6cm-deep, 19cm x 20cm (base) baking dish with butter. Thinly slice potatoes.

• Step 2

Place one-third of potato, slightly overlapping, over base of prepared dish. Sprinkle with one-third of the garlic and thyme. Arrange half the remaining potato over garlic and thyme. Sprinkle with half the remaining garlic and thyme. Repeat with remaining potato, garlic and thyme. Drizzle with cream. Season with salt and pepper. Cover tightly with foil.

• Step 3

Bake for 35 to 40 minutes or until just tender. Remove foil. Bake for 30 to 35 minutes or until golden. Serve.


RECIPE NOTES

Budget tip:
Use golden delight potatoes instead of desiree and save around $1.37 in total. Serve with roasted chicken, lamb or beef.

Variations: Layer 300g small cauliflower florets between layers of potato.
